Once your package or jar is opened the yeast must be refrigerated or frozen in an airtight container (see storage tips below). Dried yeast comes in two basic varieties: Dry yeast is fresh yeast that has been pressed and dried until the moisture content makes the yeast dormant (until these two types of dry yeast can be used interchangeably, with some limitations. Freezing yeast rather than refrigerating it makes the yeast last for at least six months without losing its activity.
